All you need to over-ride it is a power feed, via a switch to the relay which the thermatic switch controls, when you flick the switch it over-rides it. Most relays have 2 signal inputs.
I'd have the fans on accessory power, not constant. If you forgot to turn the fans off you'd kill your battery pretty quick.
Whatever you do, make sure you run a relay. Fans draw big current, especially on star-up, pulling that through any switch is a big hazard.
Talk to a good sparky, or, alternatively, if you were in Launceston in the next few weeks I can draw you up a circuit diagram and explain it to you.

Just use the haltech to run the fans when required ! I lost my two stage fan function on the delco when i went to 2-bar mapp, so i only have on or off - but you might be able to use a low and high fan speed as well
Will post up a (tonight) a wiring diagram so you can wire it with a manual over ride switch.
Will take some pics of what i did to keep it all in the relay box too ! Need to go to repco/autobarn etc, and grab a 4-pin weather proof plug. and a 40 or 50amp relay. can be 4 pin or 5 pin. doesn't matter ! If you go any higher in amps you will need to change the relay base as well as the pins become larger.
If the haltech is a straight plug in job it switches to nuetral. - do you have a/c on your car or fog lights ??? what is the exact model so i can supply wire colours.
Any chance you can list whats under your relay box ???
I.E. Fuses, Horn relay, starter relay, ignition relay, f/pump relay etc..
fuses, high beam relay, low beam relay, fog light relay, etc...

OK FAT355 you got lucky. I'm bored so made you this. This is the exact same setup as I run in the HR, just with the over-ride added. Guaranteed to work.
The small numbers on the relay are the pin numbers. I also added a light. I have this and it is most handy. Lets you know when the fans have switched on so you know if they are staying on too long, or not coming on at all. This is especially handy if the fuse blows to the relay, you'll know before your car bils that the fans aren't on.

I've got an AU fan shroud that's been modified to suit a VN-VS V8 Radiator if any one is interested, all you need is the fans to put back in it, or if you have an AU fan shroud that's cracked and looking to fit it too a VN-VS would be perfect for you... Send me a PM if you keen
